Easy Camping Tacos

We knew it would be raining on an early spring camping weekend so we made easy arrival tacos our first meal!

This recipe has a few straightforward ingredients, roasted veggies, either poached chicken or beans or both, toppings of your choice, ( we used salsa, cheese and avocado), plus an optional creamy spicy sauce.

We pretty much always roast a pan of veggies before a camping trip so this recipe starts with roasting veggies before you leave. For a weekend camping trip, we usually do this while we are cooking dinner the night before we leave. If you don’ have time to do this, you can totally cook these at the campsite as well. You can use any veggies you have on hand. Toss the chopped veggies in olive oil and sprinkle some salt and some taco seasoning if desired. Roast at 400 degrees for 15-20 mins.

We also poached 2 chicken breasts the night before. If you are vegetarian, you just need the veggies and a can of beans or 2. You can of course also cook the chicken at the campground OR you can buy pre-roasted chicken and save your self the cooking completely.

Finally, we make a creamy, spicy sauce using 4 T of full fat coconut milk and a few dashes of hot sauce to taste. I whipped this coconut milk with my hand froth-er to make it thicker. You can also use yogurt or sour cream if you have those on hand. You can use any hot sauce you like. We spent some time in Belize a few years ago and fell in love with the locally made hot sauce brand called Marie Sharps. They have a smokey version that has a unique flavor. When we came home we found that you can buy it on Amazon so we’ve been using it ever since.



At the campground, we heat up our taco fillings including opening the beans and adding a little Marie Sharps hot sauce to the undrained beans. We don’t have a microwave in our camper but here is where we would be using one if we did!

We add shredded cheese, salsa, avocado and if we are feeling fancy some diced tomato. Assemble your tacos into what ever shells you like and enjoy!

Isaac ate his tacos so fast we didn't even get a picture of them on his plate!








Because we just had to reheat our meal, we have time to get into the soaking tub before bed. I know it sounds crazy to have a hot tub at your campsite but we are at my current favorite campground belknap hot springs in central Oregon. They’ve diverted a natural hot spring to make 2 soaking tubs! It is also right on the river with some great hiking trails near by.

The beauty of this meal is that you can use the ingredients for other meals as well. We used the veggies and avocado in our morning scramble and we made taco salads for lunch.
