Easy Camping Tacos

About the Recipe

We love to make our meals ahead or at least roast a big bowl of veggies that can be added to any meal. For this recipe, we've included options for making ahead at home or making at the campsite. Either will result in a meal that can be customized based on individual preferences and that creates great leftovers.

Ingredients

Veggies

1 cup of raw veggies per person

Carrots, broccoli, onions, peppers, zucchini, cauliflower are all good choices

1 T olive oil

1/2 tsp salt

1/2 tsp taco seasoning (optional)


Chicken (optional)

2 medium chicken breasts

6 cups of water, chicken or veggie broth

salt and pepper to taste


Beans

1-2 cans of beans of your choice


Spicy Creamy Sauce

4T full fat coconut milk, sour cream or plain yogurt

4-6 dashes hot sauce


Taco Shells

Soft or Hard

Corn or Flour


Assembly ingredients (pick your favorites)

Avacado

Cheese

Lettuce or cabbage

Salsa

Tomatoes

Cilantro


Preparation

Step 1: Chicken

At home before you go: Place chicken in medium sauce pan or into an instant pot. Cover with water or broth until it is about 1 inch above the chicken.


Instant Pot method (this is what we use):

Set the pressure to high and the time to 12 minutes. Once the time is completed you can natural release or release the pressure.


Stove top method:

Bring liquid to a boil. Once liquid has boiled, cover and simmer for 10-14 minutes or until it is opaque in the middle and the thickest part is at 165 degrees.


At the campsite: Grill chicken over coals, fire or stove top.


Step 2: Veggies


At home before you go: Pre-heat oven to 400 or convection roast 350. Cut veggies into roughly 1/2 to 1 inch pieces. Toss lightly in olive oil and sprinkle with salt, taco seasoning. Roast in the oven for 15-20m stirring once until the veggies are tender.


At the campsite: If you have not already pre-cooked your veggies at home. Cut veggies into roughly 1/2 to 1 inch pieces. Heat 1 tablespoon olive oil in your largest pan. Add veggies and spices and saute until tender, 10-15 minutes, stirring occasionally.


Step 3: Beans


At the campsite: Pour undrained beans into a pan. Add a little hot sauce if desired. Heat the beans until warm, 


Step 4: Assembly


At the campsite: 

  • If desired, heat the tortillas to warm them. We scoot the veggies or chicken to the side of the pan and heat tortillas next to them. 

  • Prep topings if necessary: grate cheese, cut avacado, dice tomato. 

  • Assemble tacos using any of the toppings you have chosen
